DKS Stout

I had Shane from http://www.thehomebrewcompany.ie/ and his brother in law Derek over for a brew yesterday. They brought some bottles of extract brews with them and they were excellent, well done guys you are making great beer. I hope your step up to all grain brews is as successful for you both.
This is what we made:


4.5KG Maris Otter
.5 kg Crystal
.25 kg Roasted Barley
.25 kg Chocolate
.25 kg Melanoidin

Northdown 8.6% 30 grm 60 mins
Fuggles 4.5% 15 grm 30 mins
EKG 4.2% 15 grm 30 mins
Fuggles 4.5% 15 grm 00 mins
EKG 4.2% 15 grm 00 mins

10 tbs coffee 00 mins
2 tbs cocoa 00 mins

1 x Safale s04

We ended up with 25 litres at 1052 and i don't know about my assistant brewers but i was the worse for wear after. I sent my boss a text to tell him the car wouldn't start this morning only to figure out today is actually Sunday. I don't know how i will explain why i texted him a 7 am on a Sunday morning. It was the best brew day i've had so far,the company was great, the beers were great and the brew went smoothly. Thanks to Shane and Derek for they're help and company and i hope we can do it again sometime, for anybody interested i'll link Shanes shop on the bottom of the page. 7 euro delivery anywhere in Ireland (32 counties) for any weight and with in 24 hours is amazing, all the brewers of Ireland need to back these guys cause we won't get a better variety and service.

Looking good there AT! It's ages since I've had a "bring a friend" brewday I'm going to have to rectify that situation very soon!

Any sneaky tasters of the brew yet?

It's only coming out of the fermenter tomorrow John. It was a long time fermenting out and after 9 days i was a bit worried and had a sneak preview, it was quite harsh and there was no sign of cocoa or coffee but i am hoping when the harshness fades they will shine through

They're probably lurking in the background somewhere waiting for the brew to mellow together before showing themselves.

I seem to get a strong coffee flavour when using around 200g roast barley in 23l which is pretty much what you've got there.
