WTF? Ale
I did this yesterday and to be honest i'm not sure what to expect from it but i think it will be horrible or nice but nothing in between.

Edit this is drain cleaner, to many peppers and it's over powering.

Who's your daddy?
I did this yesterday, it's a beer i'll be bottling and putting away 'til Christmas, it's ended up at 1052 and there is still some honey to be added. It's gonna be a monster beer.

60g Nelson Sauvin 13.3% 60 mins
40g Nelson Sauvin 13.3% 00 mins added during cooling at 80c with the IC turned off for 15 mins
When primary is almost complete i'll be adding 2kg of honey and lowering the temperature a couple of degrees in an effort to prevent to much
gassing off of the honey volatiles.
I added 1.05 kg of honey last night (11/07/08) as fermentation had considerably slowed, i'll give it a few more days and do the same again and maybe pitch a fresh pack of yeast
I added the second 1.05kg of honey last night (16/07/08) with a second pack of yeast just in case. It all looks and smells great so fingers crossed on a brew that came to me in a moment of madness lol

Big Kenny
Another version of big Kenny done yesterday, i got 25L at 1047. Also when the boil was on i kegged my last brew "Gold Fever".
I'm planning on brewing the exact same Big Kenny recipe next week but with a liquid yeast (Wyeast #1335 British Ale II) just to see what all the fuss is about with liquid yeast as i've never used it before, probably because i was to tight to pay for it. I'll make a starter from it on Thursday and hopefully brew again next Saturday

Gold Fever
With summer seemingly in full swing i decided to do another golden ale, this one is very closely related to my house ale Fools Gold, i ended up with 25 L @ 1052 and i stopped sparging @1028 which should really improve the body and indeed the quality of the finished product

HERMS
I got my 70L thermo box and my two 70L stock pots from Nordic Optical yesterday and today i ordered my PID controllers, SSRs, probes and ball valves, most of the rest of the gear i need i can source locally. I had originally planned on building a 100L system but i decided on brewing 50L batches because 100L of the same beer is a bit much even for a thirsty punter like myself. I don't expect my system to be finished any time soon but i can start on fitting the ball valves next weekend and maybe build the heat exchanger. I'll keep the blog updated as i go

Chocolate Treacle Stout
I did this bank holiday Monday evening 5/5/08, i ended up with 25L at 1056. Just like the last time i did this recipe the fermentation has proven to be aggressive. Even in a 33 L fermenter it managed to escape all over my fermentation cupboard

Cascade Kenny
I did this Saturday, it was supposed to be Big Kenny again but it seems the hop shortage hit my freezer when i wasn't paying attention and i had no Syrians so i used Cascade instead. I had quite a lively start to fermentation and spent some time moping and cleaning my fermentation press but it's all in the name of beer :-)
I also bought the start to my HERMS system on Sunday night, god bless beer and ebay. A 70 L baine marie that will be used as a mash tun and a 50 L stock pot which will be used as a HLT. I'm bidding on a 70 L stock pot after been unsuccessful at my first attempt a winning one on e bay and that will be used as my boiler. I hope to have it up and running before the end of summer

DKS Stout
I had Shane from http://www.thehomebrewcompany.ie/ and his brother in law Derek over for a brew yesterday. They brought some bottles of extract brews with them and they were excellent, well done guys you are making great beer. I hope your step up to all grain brews is as successful for you both.

We ended up with 25 litres at 1052 and i don't know about my assistant brewers but i was the worse for wear after. I sent my boss a text to tell him the car wouldn't start this morning only to figure out today is actually Sunday. I don't know how i will explain why i texted him a 7 am on a Sunday morning. It was the best brew day i've had so far,the company was great, the beers were great and the brew went smoothly. Thanks to Shane and Derek for they're help and company and i hope we can do it again sometime, for anybody interested i'll link Shanes shop on the bottom of the page. 7 euro delivery anywhere in Ireland (32 counties) for any weight and with in 24 hours is amazing, all the brewers of Ireland need to back these guys cause we won't get a better variety and service.
